“Our neighbour breeds chubby Cornish pigs in small batches and gets the most intense flavoured chops I’ve ever eaten. Roasted by a hard wood fire, served with his mum’s apple jelly. Crispy skin, soft fat, tender meat.” William Head, on life in north Cornwall…
So far, we’ve heard from chef, caterer and dad-of-one William Head about long walks with his one-year-old son Kobe, and eating from the land. Now we hear about his neighbours: a pig farmer and vegetable-growers…
A variety of food
With such wildly different environments around us, it’s no wonder that so many outstandingly awesome tastes are available. I know it sounds like I’m working for the north Cornwall tourist board, I assure you I’m not, but it really is insane how much goodness there is to eat here.
Our neighbour breeds chubby Cornish pigs in small batches and gets the most intense flavoured chops I’ve ever eaten. Roasted by a hard wood fire, served with his mum’s apple jelly. Crispy skin, soft fat, tender meat, smokey smells. I swear, it’s just bloody amazing.
Not far from us we have two veg suppliers that produce bags of incredible salad leaves. The contents changes all year round, but at the peak of summer we counted 52 different types of leaf. Sweet, bitter, floral, crunchy, beautiful and ever changing.
We’ve only been here for over a year and already we’ve found some really exciting projects and met some remarkable people. It’s been a great way to fit into a community, but also a great way to learn about the importance of eating what grows close to you. I just cant wait to hear Kobe ask what’s for lunch…
